Anyone know how to change the DNS servers of the Verizon FiOS router? Thanks.

Login to your router.
Go to: My Network > Network Connections > Broadband Connection
Under "Action" Click the edit icon. Click Settings at the bottom
On the drop down menu at DNS Server choose "Use the following DNS Server Addresses"
Enter the DNS servers you want to use. Click Apply
The above is for an Actiontec MI424WR. If you have a different router, the process may be different. But the basic process should be the same.

Will changing the DNS cause any issues with any Fios services (set top boxes, in-home live TV streaming, etc.)?

The DNS addresses used by the router should change following those instructions. Notr that your devices will use 192.168.1.1 (the routers address) as the DNS server. Other choice is to change on each computer or device.

Did you check that the router retained your settings after you changed the values. If so and it's still using a different dns server (how are you checking that?) then you must have the dns servers set on your local machine to whatever dns server you are going to. For that you need to modify the value in the network adapter setting for ipv4
For win7 that would be
open control panel
select network and sharing
select change adapter settings on left
right click whichever of the adpters in the list you are using
hilight Internet protocol version 4
select properties
Typically is set to obtain DNS server automatically (that means allocated by the routre or server that gave you the dhcp addr - typically will be the addr of the dhcp server)
If you want to override it selet use the following dns servers and enter your own values.
