How can I be certain that it is Verizon that I am connected to?

And how can I find out if anyone is interfering or whatever with my networking, websites, services, communications, etc for some reason?

Also, are there any Windows settings that should be changed or somethig when going from Cable internet to Verizon DSL?

From Cable to DSL, just leave your computer as-is. In almost any case you simply connect your computer to the modem. At most you will need to run a setup wizard to get your DSL connection set up with an account, but that can be started via a web browser.
As for verifying that you are actually going through Verizon, the best and easiest way is to visit a site such as Speedtest.net which has a user-friendly display of your IP address and who the ISP is near the bottom left of the speed testing app.
