When 5G is set to automatic I have no wifi signal at all, It works when I change to a channel. Firmware bug?

Welcome to the forums.  You're talking to peers here.

First of all, know that it's a router, not a modem.  FiOS doesn't use modems.

I have the Quantum G1100 router.  5GHz works fine for me with both automatic and manual channel assignments.  Are you configured for 802.11n & AC mode or just AC?  Are you certain it's not an issue with your device?

I have a related question regarding the G1100.  In checking the settings, it appears mine is set for BOTH 2.8 and 5.  Should I deselect the lower and keep only the 5GHZ (set to automatic?)  Thanks in advance.

Depends on what devices you will use wirelessly.

If you have older devices, they may not support 5 GHz band.
