All I want to switch to Ethernet and attached the picture of my box.

I have 3 CAT 5 cables outside running into my home run, one being a shielded outdoor. To confirm I simply terminate the outdoor cable to the box and plug in my Firewall/router on the other side?

Or is it ok to use one of the regular cat 5 lines?

A little more than that.

Need to call Verizon and have them provision internet on Ethernet.

Before they make the change, you should log in to your existing router and release wan IP.

Otherwise, iut can take a couple of hours before it times out and you can get IP via Ethernet

As the poster above me said, release your WAN DHCP address on your current verizon provided router.

Otherwise, yes, you can crimp the ethernet, plug it into the ONT's port, then plug your router into the other end. I'd suggest using the shielded cable to connect to the ONT. Also, be certain that your connecting to the right cable on the inside (You can probably use a cheap ethernet tester such as the one in the photo below to determine which cable runs to the inside, if you don't know already.)
