Setting up gigabit service soon (internet only) and I was curious if this setup would work:
ONT - Cat5e - GoCoax Moca adapter - coax - G3100 Router WAN Coax port.
I've seen some threads talking about using 2 extra MoCa adapters, but I'm wondering if it will work with the coax port already on the router? I do see a line in the router features that says MoCA 2.5 LAN, MoCA 1.1 WAN. Does this mean that the the coax port on the G3100 is actually no good on the WAN side for gigabit?

That is correct. MoCA 1.1 only support speeds up to 175Mbps, definitely bottlenecks your gigabit subscription.
