You'll have to look up what channels you have available based on your package, but you can set up a favorites list once you have that. Just get into the menu, go down to settings, go to the right and then down to Favorite Channels, then to the right to Favorite 1 (or 2 if you wish), then to the right and down to add/remove channels, then to the right and then go down the list. Press OK on just the stations you actually watch. When you are done, press exit.
Tip: you can jump to particular channels to add by entering the number instead of scrolling down (which can take a while).
When you bring up the guide or use the channel up/down buttons you should be able to press the Favorites button to get it to go from displaying all channels to favorites 1. I believe the box will remember that preference and automatically show the favorites 1 or channel up/down using favorites 1 after that.

I am only getting a few channels in the 500 range...if I want Discovery, Animal Planet ESPN I have to upgrade, bringing my bill to over $230 a month. I switched to FIOS a couple years ago because the pricing was really good, but that doesn't seem to be the case anymore. ALSO...it would be nice if I could set my boxes to only show the channels I pay for...it's impossible to remember where the channels are and what's on them...I'd love to flip through ONLY the channels I can actually watch! Is there a way to do that?

Thanks for the suggestion. I'll try that later tonight, hopefully I can figure it out. I think I remember having a problem with "favorites" at some point?!?!!
I did call and had to upgrade my package to extreme to get the HD channels I wanted...I still wonder how Bright House can offer HD channels free?? I like the fact that I can record a program and watch it on one of the other five TV's in my house, so I'll stick with FIOS, even if it is more $$
PS...I think it's funny that verizons website spell check doesn't recognize FIOS...???

I can't say anything about Bright House, I've never heard of them before. But I think the FREE HD is something of a marketing ploy. If you raise the price of analog/digital channels to double or come up with other hidden fees or costs and then claim the HD versions of those channels are FREE... are they really? Before I signed up with Verizon FiOS I did give Comcast a chance here (they also claim to offer FREE HD). When adding in all the costs and fees, what I found was Comcast actually offered less and cost more than Verizon FiOS. Actually found some other things that went in Verizon's favor as well when it comes to internet. The difference was so distinct, I even called Comcast to see if there was something I was figuring wrong... I wasn't.
Of course, it was 2009 when I signed up for FiOS Extreme HD package... and now in 2010 Verizon has messed with their TV packages so I'm not sure exactly how the two would compare today. Comcast is doing the whole "Xfinity" thing now, but last time I checked, it looked like the only change was in the name as the packages offered looked identical to me in cost and what was provided. I'm guessing Verizon FiOS still comes out ahead.

"Discovery, Animal Planet ESPN"
You should be getting all of those channels in HD no matter what plan you have - Prime HD, Extreme HD, or Ultimate HD. They are all included.
Perhaps you are still on an outdated Premier or Essentials plan? Those were from years and years ago and only included local channels in HD.
All current plans include "free HD."

Here is a link to a thread with lots of info about using Favorites:
http://forums.verizon.com/t5/FiOS-TV-Technical-Assistance/Exploiting-FiOS-TV-Favorites/td-p/9935
Even though it has not been updated in a while, pretty much nothing has changed related to setting up and using Favorites.
