My great-grandmother got Verizon Fios TV installed today. She's 96 and uses one of those giant remotes (Living Solutions) and I tried to figure out how to get it so I could program the cable box into the remote since the buttons on the regular verizon remote are way too small but have had no success.

All she basically needs is the power, channel up/down, and volume buttons to work...nothing fancy like DVR

the cable box uses code 900 I think to program. you can try that, or see if that giant remote has a generic manual search procedure. the verizon remote has a manual search, so maybe the giant remote does too. but in general I am pretty sure the VZ set top box uses 900 for its programming code
