What determines whether a program will record on the DVR or the eSata drive?

If eSATA is connected, it will be used until full. Then it will go to internal drive.

That's what I thought, but eSata is only at 80% and it is defaulting to the internal drive. Any way to force it to use external?

May depend on how large the program you want to record?
What size is you eSATA drive?
Does it do it even for a 30 minute program?
What if you try a 30 minute SD program?

It takes about 4 hours of SD programs to move it 1%, so there should be plenty of room. There are a lot of programs listed under Manage Deletions, which I'm sure are using space. However, when I go through Manage Deletions and delete them all from the DVR, usage % actually increases (that's another problem). There doesn't seem to be a rhyme or reason. It will record one show on the internal and the next on the external.
