My tv supports AV (RED/Yellow/White) cables if I hook up my tv through that way will the sound or quality of picture degrade or be the same as if it were hooked up through HDMI?

No where close to HDMI.
You get HD via HDMI/component.
You have compostie so you will only get SD quality.

Yes the picture will degrade as you are using analog connections. You will only get 480i max from them. You can't get 720 or 1080 high def. from them.

AS others said very much degraded Video. Composite was only one step up from old antenna connections. There were, even for SD, better connections in the old days such as S-video. Some SD sets even did Component and supported 480P.
