I am a bit technologically challenged.
In a back room (den/office) I have my PC connected through my Verizon router to a phone jack. I want to use a Xbox 360 to view Netflix streaming videos via Xbox Live on an HDTV. Rather than string a long cable from the den all the way to the living room where the TV is, can I get another router (Verizon or not) hook that up to a phone jack in the living room then to the Xbox to the TV. What are potential problems? Will using 2 routers on one phone line cause difficulties?

You can not use a 2nd Verizon DSL Router as you described.
If you currently have a Router with wireless capabilities you can try something like this:
