Has anyone else seen this behavior when logged into their router? I have a G1100 Quantum router.

Cannot detect network interfaces. You would need a reboot. If still does not show up, I recommend you to swap with another G1100.

Thanks! I unplugged it, waited 30 seconds and powered it back up. It had the same behavior when I logged in again. Does that constitute a proper reboot?

#1 What is the name and version of the web browser?
#2 While we get that you have FIOS Internet, do you also have FIOS TV?
#3 How/Where did you get that NAT router? For example, was it eBay?

The screenshot was Safari for MacOS, but I replicated this behavior on Firefox and Google Chrome, as well as Safari for iOS.
I have Fios TV as well as internet.
The Quantum router was purchased directly from Verizon, not a third party or pre-owned.

if that's the case, I recommend you to swap your existing G1100 with another G1100. You can buy used G1100 off Ebay for cheap.
