I'm thinking of moving from Comcast to FiOS. I watch a lot of TV on my iPad and I want to make sure FiOS has comparable features. Are HBO and SHO available to watch, with episodes from all seasons of their shows? How about shows on other networks? Is there a large On Demand menu for the iPad?
Any info would be much appreciated.

Showtime Anytime On Demand, but not live.
At this time there are 75 channels available for streaming to Ipads, some Smart TVs, and X-Box. If it is not on the list, it is not available for streaming at this time. I would hope the numbers would increase. I believe the new VMS-1100 Media server that is do to be released some time this year, uses streaming technology to the STBs, so I would hope more will become available.

In regards to on Demand, Verizon uses what they call Flex View Technology to load the content on your portable device. See this page for compatible devices and the type of on demand that can be loaded on your portable device by type.
