It would certainly be nice, along with them allowing HD channels to be streamed to a non-HD box. It has to be possible since I can do with with a slingbox, but I can't with the home media dvr.
Or, all of this wouldn't be a problem if I could record 3+ channels at once

But why would you have a non-HD set-top-box connected to an HD-TV?
Is it not possible to watch shows recorded on one DVR on another DVR? If so, I guess I screwed up with the installation I had done today!
I have had a QIP-6416 multi-room DVR for about a year, along with several standard STBs. Today I replaced one of the standard STBs with a QIP-7216 P1 HD DVR, assuming I could watch shows recorded on either one of the DVRs on the other one. But apparently that's not true? (When I access the DVR function on the new box, there is no indication that the other DVR even exists.)
If reciprocal viewing of recorded shows is not possible, I don't think I'll keep two DVRs. Since I presume that the 7216 is a newer model than the 6416, would I be better off keeping the 7216 and returning the 6416? And then if I replace the box I return with an HD STB (model 7100?), can I use it to watch HD shows that were recorded on the multi-room DVR? I'm pretty sure that when I initially set up the system, that wasn't possible.
It is not currently possible to watch on another DVR. There have been some rumors that it might come in the future, no date that I know of.
From what I have read on this and other forums, I would keep the 6416. While the 7216 is newer, it apparently has more problems than the older 6416. I recommend you search here, and perhaps at dslreports.com and highdefforum.com, I think you will find lots of threads about problems with the 7216 (I do not have one, I have a 6416).
Yes, you can watch HD shows recorded on the DVR on HD STBs. That was not true when the multi-room function first became available, but with the delivery of the latest level of the guide (1.6.0) some months ago that is suppored.

So are you saying that a non-DVR STB can watch shows from a DVR but a DVR cannot watch shows from another DVR? That seems strange.
Yes, that is what I am saying. It may seem strange, but that is the way Verizon chose to implement it, at least for now.
Keep in mind that the DVR must have the multi-room feature activated on it for you to be able to view recorded programs on other STBs.
